DoubleTree by Hilton Minsk Hotel is currently recruiting for a Chef de Cuisine to join our F&B team.
The Chef De Cuisine is a crucial part of the kitchen management team, in charge of controlling and supervising the kitchen. This position will directly report to Hotel Executive Chef.
Responsibilities of the Chef de Cuisine:
- Effectively plan and develop menus for the Ember Restaurant and Ember VII Heaven considering factors such as product availability, food and service cost, marketing conditions and business volume.Be accountable for food cost in his area of responsibility as well as areas he might be assigned by the Executive Chef.
- Be accountable for labor costs and operating expenses through effective planning, budgeting, purchasing decisions, policy making, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit in the department, division and hotel.
- Ensure that sanitation standards as set forth by Hilton and local regulations are in compliance as well as the cleanliness and organization of the kitchen.
- Set up control systems and be accountable for quality and portion consistency and the ability to create proper purchasing specifications as well as monitor and review operating criteria and develop an awareness of the importance of food preparation and quality.
- Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.
We are looking for candidates with 4 to 6 years demonstrated leadership in the Culinary field, and must be able to show:
- Strong people leadership skills
- Business acumen, including labour control and food costing
- Background in Asian/French/Italian cuisine preferred, but not required
